When you think of classic Italian cheeses, you think Provolone. In Italy, when you think Provolone, the name that immediately comes to mind is Auricchio – the first family of provolone. This legendary cheese was first handcrafted in 1877 with Gennaro Auricchio’s “secret family recipe” which quickly became a much-loved delicacy.
