Our distinct cheeses all have unique characteristics that set them apart from other provolones and our special rennet recipe (unique to each style of provolone) is what gives Auricchio Provolone the unique and unmistakable flavor you know and love.

PROVOLONE STRAVECCHIO

Stravecchio or ‘Extra Aged’ is the most mature of our provolones. Naturally aged for 18 months, Stravecchio has a rich, black coating to call out its pedigree.

The unique taste of Auricchio Provolone Classico is world famous and makes it immediately recognizable among all other cheeses.

PROVOLONE STRAVECCHIO

A soft texture and a slightly piquant flavor: Auricchio Gustoso is produced following the recipe for Provolone Classico but differs in its shorter
ageing period.

Auricchio Provolone Dolce (Mild Provolone) is matured up to 60 days to preserve all the delicacy of the milk.

PROVOLONE GIOVANE

Soft and delicate thanks to its short maturing period, Auricchio Giovane (Young Provolone) is still produced today following the traditional recipe of our classic Provolone.

PROVOLONE DOLCE

Auricchio Provolone Dolce (Mild Provolone) is matured for about a month to preserve all the delicacy of the milk.

PROVOLONE GIOVANE

Soft and delicate thanks to its short maturing period, Auricchio Giovane (Young Provolone) is still produced today following the traditional recipe of our classic Provolone.
