
Viral Onion Chips with Auricchio Provolone & Marinara Dipping Sauce
These cheesy onion rings are so easy to make, the sweet onion and sharp Provolone are the perfect combo for a tasty snack. Danielle from @haveucoveredinthekitchen shows us how to make them.

- Preheat your oven to 400°F
- Slice the onions into thin rings about ⅛ inch thick works best for crispiness. Separate the rings and pat them dry with paper towels to remove excess moisture.
- Line a baking sheet with parchment paper. Sprinkle the grated Auricchio provolone evenly over the baking sheet. Spread out the onion rings over the cheese in a single layer—don’t overcrowd. Spray generously with extra virgin olive oil spray. Season with garlic powder, paprika, and EBTB seasoning.
- Bake for 18-20 minute until golden, bubbly, and crisp around the edges. Let cool slightly before serving—they crisp up more as they cool.
- Once cooled, place a cutting board on top and flip the pan to make it easier to carefully peel away the parchment paper. Slice the onions into squares with a mezzaluna. Serve with marinara dipping sauce (see below for recipe).
San Marzano Marinara Sauce:
- Ingredients:
- 2 tbsp extra virgin olive oil
- 2–3 garlic cloves, smashed
- 1 can (28 oz) San Marzano tomatoes whole, peeled preferred, hand crushed
- Salt, to taste
- Freshly ground black pepper, to taste
- ½ tsp crushed red pepper flakes, optional, for heat
- Handful of fresh basil leaves, torn or left whole
- Instructions:
- Heat the oil in a saucepan over medium-low heat. Lightly smash the cloves and sauté until golden and fragrant, then remove. Add the San Marzano tomatoes, crushing them by hand or with a wooden spoon as you pour them in. Add all the juices from the can. Season with salt, pepper, and red pepper flakes. Stir well. Simmer uncovered for 25–30 minutes over low heat, stirring occasionally. Let the sauce reduce and the flavors concentrate. In the last 5 minutes, add the fresh basil - let it infuse the sauce without overcooking. Taste and adjust seasoning, then serve immediately or cool and store.

Tips: - These are best eaten fresh but can be stored in a paper towel-lined container for a day or so.
