Whole Wheat Fusilli with Fava Beans and Auricchio Sharp Provolone

This healthy pasta is loaded with veggies and herbs and gets its full flavor from grated Auricchio. A perfect spring dinner.

Ingredients
  

  • 6 ozs of Auricchio Sharp Provolone grated
  • 13 ozs. whole wheat fusilli
  • 5 oz canned fava beans
  • 20 ripe cherry tomatoes
  • Fresh green onion chopped
  • Basil or other aromatic herbs
  • Extra Virgin olive oil
  • Salt and pepper

Instructions
 

  • Boil the pasta according to directions on box. Heat oil in a large skilet (as well as garlic if enjoyed), add fava beans with salt, pepper and a spoonful of pasta cooking water. Add raw tomatoes with oil, salt and pepper and herbs, as desired. Smash tomatoes with back of a fork. Cook until vegetables are soft. Remove from heat and add Auricchio cheese. Serve over pasta.
