Gnocchi with Cabbage and Auricchio Mild Provolone

Soft, pillowy gnocchi with caramelized cabbage and nuts. Serve this special dish for any special occasion.

Ingredients
  

  • 1 package Provolone Auricchio Slices cut into strips
  • 1 small head of green cabbage finely chopped
  • 17 oz package gnocchi
  • 4 Tbsps. butter
  • 1 shallot or 1/2 white onion
  • 10 sage leaves
  • 2 tbsp walnuts chopped
  • 1 cup vegetable broth
  • Salt and pepper

Instructions
 

  • Finely chop onion and saute in a pan with olive oil until transparent. Add the cabbage. Cover with the vegetable broth. Cook with salt and pepper for 10 minutes approx. Transfer to a blender, or with a stick blender, blend until creamy and smooth.
  • Meanwhile, melt the butter, add the sage leaves and the nuts. Cook gnocchi, add them in with the buttered sage and saute. Plate creamed cabbage, top with gnocchi and Provolone strips.
